Use the trigger height as the real deadline. For stem plants, set it below the water surface so tops are trimmed before they shade lower leaves and slow side shoots.

So you buy the plants, put them into the aquarium, fill up the tank with water, and wait. Soon (usually two weeks), your stems is touching the glass surface. Another week goes by and they break through, casting shadows on anything beneath them as the lower leaves yellow and rot off.

Shading those lower leaves makes them melt down, forming waste that feeds algal blooms.
